Zucchini Oven Chips Gluten Free
Here's a great recipe that gives you fiber and is healthy. Try dipping these in a low fat gluten-free ranch or other dressing for a real taste treat.
½ cup gluten-free bread crumbs (Glutino)
½ cup grated fresh Parmesan cheese
½ teaspoon seasoned salt
Freshly ground black pepper to taste
2 to 3 tablespoons low fat milk
2 egg whites
2 ½ cups sliced zucchini (2 small)
Preheat oven to 425 degrees. Spray an oven proof wire rack with vegetable spray. Set on a cookie sheet lined with parchment paper. Make sure the rack is not flush against the rack. If necessary, prop the edges up with oven-proof saucers or small custard cups so the air moves around all sides of the zucchini slices.
In a shallow bowl, whisk together bread crumbs, cheese, salt and pepper. Reserve. In a second shallow bowl, beat milk with egg whites. Dip the zucchini into milk mixture then dredge in bread crumbs to coat. Set in a single layer on the wire rack and bake 30 minutes or until brown and crispy. Serve warm. Serves 4 to 6.
