Vegetable patties with zucchini, carrots and potatoes
Tired of the same old meatballs? Looking for something yummy and low-fat to flavor your diet? Try out these delicious vegetable patties with zucchini, carrots and potatoes. I found the recipe on the website where I got my mediterranean diet from (Italiandiet) and I loved it “at first taste”, so I thought it would be nice to share it with all of you! Well, here's the recipe. Enjoy your meal! INGREDIENTS (for 2 people): 2 potatoes; 2 zucchini; 2 carrots; bread crumbs; parsley; pepper; salt; flour; olive oil; onion. DIRECTIONS: Boil potatoes with skin. When cooked, remove skins. Boil carrots and zucchini. Combine and mix all vegetables together in a bowl. Add some bread crumbs to the mixture along with some chopped parsley, salt and pepper, and mix well. Work mixture into round balls, then flatten them and coat with flour. Heat a nonstick pan with olive oil and chopped onion and place the vegetable patties in the pan. Let cook for about 5 minutes, turn and cook 5 more minutes on the other side.
Just a little tip: I use to coat my patties with grated bread instead of using flour, they come out a little crispier (and much yummier!) that way... :-)
